
I was complimenting my butcher in Essex on his Swedish Korv and offered to inquire about recipes for Scottish sausages when I visited Scotland's best sausage shop. The day I visited in Edinburgh there were 20 varieties on offer--all fresh. Unfortunately the man wouldn't give up a recipe ("you wouldn't be able to find the ingredients in America"), but we bought some fresh linguiƧa, "auld reekie", and a couple of other varieties.

I have never seen such an array of sausages. Makes my mouth water. Irish sausages are our favourites. American hot dogs don't compare.
